Why do sugary beverage and fast food industries thrive in the emerging world?An interesting public health paradox has emerged in some developing nations. Despite government commitment to eradicating noncommunicable diseases and innovative prevention programs aimed at reducing obesity and type 2 diabetes, sugary beverage and fast food industries are thriving. But political leaders in countries such as Mexico, Brazil, India, China, and Indonesia are reluctant to introduce policies regulating the marketing and sale of their products, particularly among vulnerable groups like children and the poor. Why?In Junk Food Politics, Eduardo J. Gómez argues that the challenge lies with the strategic politics of junk food industries in these countries. Industry leaders have succeeded in creating supportive political coalitions by, ironically, partnering with governments to promote soda taxes, food labeling, and initiatives focused on public awareness and exercise while garnering presidential support (and social popularity) through contributions to government anti-hunger and anti-poverty campaigns. These industries have also manipulated scientific research by working with academic allies while creating their own support bases among the poor through employment programs and community services. In The College Stress Test, Robert Zemsky, Susan Shaman, and Susan Campbell Baldridge present readers with a full, frank, and informed discussion about college and university closures. Drawing on the massive institutional data set available from IPEDS (the Integrated Postsecondary Education Data System), they build a stress test for estimating the market viability of more than 2,800 undergraduate institutions. They examine four key variables—new student enrollments, net cash price, student retention, and major external funding—to gauge whether an institution is potentially at risk of considering closure or merging with another school. They also assess student body demographics to see which students are commonly served by institutions experiencing market stress. The book's appendix includes a powerful do-it-yourself tool that institutions can apply, using their own IPEDS data, to understand their level of risk. The book's underlying statistical analysis makes clear that closings will not be nearly as prevalent as many prognosticators are predicting and will in fact impact relatively few students. The authors argue that just 10 percent or fewer of the nation's colleges and universities face substantial market risk, while 60 percent face little or no market risk. The remaining 30 percent of institutions, the authors find, are bound to struggle. To thrive, the book advises, these schools will need to reconsider the curricula they deliver, the prices they charge, and their willingness to experiment with new modes of instruction. The College Stress Test provides an urgently needed road map at a moment when the higher education terrain is shifting. A strong proponent of the Pure Food and Drug Act of 1906, still the basis of food safety legislation in the United States, Wiley gained fame for what became known as the Poison Squad experiments—a series of tests in which, to learn more about the effects of various chemicals on the human body, Wiley's own employees at the Department of Agriculture agreed to consume food mixed with significant amounts of various additives, including borax, saltpeter, copper sulfate, sulfuric acid, and formaldehyde. One hundred years later, Wiley's influence lives on in many of our current popular ideas about food: that the wrong food can kill you; that the right food can extend your life; that additives are unnatural; and that unnatural food is unhealthy food. Eating—the process of taking something external in the world and putting it inside of you—has always been an intimate act, but it was Harvey Wiley who first turned it into a matter of life or death. In The Chemistry of Fear, Jonathan Rees examines Wiley's many—and varied—conflicts and clashes over food safety, including the adulteration of honey and the addition of caffeine to Coca-Cola, formaldehyde to milk, and alum to baking powder. Although Wiley is often depicted as an unwavering champion of the consumer's interest, Rees argues that his critics rightfully questioned some of his motivations, as well as the conclusions that he drew from his most important scientific work.
