Almost two decades have passed since the first edition of Food Science was published in 1968. Previous editions have been widely circulated in the United States and abroad and have been accepted as a textbook in many colleges and universities. The book also has been translated into Japanese and Spanish. This response has encouraged me to adhere to prior objectives in preparing this fourth edition. The book continues to be aimed primarily at those with no previous instruction in food sci­ ence. Its purpose is to introduce and to survey the complex and fasci­ nating interrelationships between the properties of food materials and the changing methods of handling and manufacturing them into an al­ most unlimited number of useful products. The book especially ad­ dresses the needs for insight and appreciation of the broad scope of food science by students considering this field as a profession, as well as those by professionals in allied fields that service or interface with the food industry in ever-increasing ways. The literature of food science and food technology has rapidly ma­ tured from earlier articles to books to encyclopedias. Where technolog­ ical capabilities once were limited, rapid advances in many fields contin­ ually raise questions on the responsible management of technology and its environmental, social, and economic consequences. Changes in em­ phasis have been many. Affluent countries have become more con­ cerned with the health effects of nutrient excesses than with deficien­ cies, while hungry nations continue to suffer shortages.

The publication entitled "Surface Studies by Scanning Tunneling Mi­ Rl croscopy" by Binnig, Rohrer, Gerber and Weibel of the IBM Research Lab­ oratory in Riischlikon in 1982 immediately raised considerable interest in the sur­ face science community. It was demonstrated in Reference R1 that images from atomic structures of surfaces like individual steps could be obtained simply by scanning the surface with a sharp metal tip, which was kept in a constant distance of approximately 10 A from the sample surface. The distance control in scanning tunneling microscopy (STM) was realized by a feedback circuit, where the electri­ cal tunneling current through the potential barrier between tip and sample is used for regulating the tip position with a piezoelectric xyz-system. A similar experi­ mental approach has already been described by Young et al. for the determination l of the macroscopic roughness of a surface. A number of experimental difficulties had to be solved by the IBM group until this conceptual simple microscopic method could be applied successfully with atomic resolution. Firstly, distance and scanning control of the tip have to be operated with sufficient precision to be sensitive to atomic structures. Secondly, sample holder and tunneling unit have to be designed in such a way that external vibrations do not influence the sample-tip distance and that thermal or other drift effects become small enough during measurement of one image.

Educational sociologists have for some time been interested in the rela­ tionship between the behaviour of pupils and the quality and effectiveness of the school. I Practitioners of law in general, and education law in particular, could not ignore the legal status of the education user. It immediately became apparent how interwoven education is with a diversity of disciplines within the legal domain, as well as with other scientific disciplines.

Crises are not a feature of depressive illness; but this illness needs to be considered in the diagnoses of three acute emergencies: the agitated patient, the withdrawn patient and the suicidal patient. A. The agitated patient. Restless, anguished, phrenetic and impor­ tunate behaviour. Differential diagnoses include hypomania, acute anxiety and grief, hysteria, drug intoxication, thyrotoxicosis, cerebrovascular accident or cerebral tumour. Agitated depression carries a relatively high risk of suicide. Management usually requires admission and use of adequate doses of antidepressant and neuroleptic drugs, and often ECT. B. The withdrawn patient who avoids social contacts and obligations and is often slowed up in mind and body. Differential diagnoses in­ clude schizophrenia, CVA or tumour, hysteria and semi-coma includ­ ing drug intoxication. Withdrawn and retarded patients with depres­ sive illness are at risk of failing to eat or care for themselves. C. The suicidal patient. May present as unexpected, inexplicable coma; a badly cut patient may be confused by the doctor with acci­ dent or assault. The immediate emergency is medical or surgical: treatment is for coma, bleeding or asphyxia, and requires immediate admission to casualty. The first presentation of depression is always a minor emergency as it may be the only attempt the patient makes to see a doctor. Diagnosis must be positive, based on the recognition of depres­ sive features, not negative, based on the exclusion of other dis­ eases. The cardinal symptoms of depressive illness: 1. Disturbed sleep pattern. 2. Change in appetite for food.
