In the early nineteenth century, a group of German biologists led by Johann Friedrich Blumenbach and Karl Friedrich Kielmeyer initiated a search for laws of biological organization that would explain the phenomena of form and function and establish foundations for a unified theory of life. The tradition spawned by these efforts found its most important spokesman in Karl Ernst von Baer. Timothy Lenoir chronicles the hitherto unexplored achievements of the practitioners of this research tradition as they aimed to place functional morphology at the heart of a new science, which they called "biology." Strongly influenced by Immanuel Kant, the biologists' approach combined a sophisticated teleology with mechanistic theories and sparked bitter controversies with the rival programs, mechanistic reductionism and Darwinism. Although temporarily eclipsed by these two approaches, the morphological tradition, Lenoir argues, was not vanquished in the field of scientific debate. It contributed to pathbreaking research in areas such as comparative anatomy, embryology, paleontology, and biogeography.

In this ambitious work, Fred Weinstein confronts the obstacles that have increasingly frustrated our attempts to explain social and historical reality. Traditionally, we have relied on history and social theory to describe the ways people understand the world they live in. But the ordering explanations we have always used—derived from the classical social theories originally forged by Marx, Tocqueville, Weber, Durkheim, Freud—have collapsed. In the wake of this collapse or "fall," the rival claims of fiction, psychoanalysis, sociology, anthropology, and history have created the dilemma of radical relativism, the prospect of multiple interpretations of any complex historical event. The basic strategy of social theory and the social sciences—the search for underlying unities—proves so inherently contradictory and has provided so little in the way of reliable knowledge of social and historical relationships that to many critics it seems no longer worth pursuing. Weinstein enters the debate by rejecting any search for underlying structural unities, dynamic or social, through which historians have attempted to find continuity with the past. He looks instead to ideological processes, to the construction of successive and changing versions of reality that mediate between the power of fantasy on the one side and the power of the social world on the other. He argues further that the need to use ideological constructs in this way accounts for the heterogeneous and changing content of social movements and for the persistent need people have always had for authoritative leaders, even in democratized societies. He suggests that people have historically been able to take a step away from leaders only by substituting the possession of objects such as property or money. This book is a breakthrough in poststructuralist theory that is sure to stimulate considerable discussion, especially about the shape of the social sciences and the future of historical interpretation.

He presided over Virginia's great political barbeques for the last half of the nineteenth century, taught the young Prince of Wales to crave mint juleps in 1859, catered to Virginia's mountain spas, and fed two generations of Richmond epicures with terrapin and turkey. This fascinating culinarian is John Dabney (1821-1900), who was born a slave, but later built an enterprising catering business. Dabney is just one of 175 influential cooks and restaurateurs profiled by David S. Shields in The Culinarians, a beautifully produced encyclopedic history of the rise of professional cooking in America from the early republic to Prohibition. Shields's concise biographies include the legendary Julien, founder in 1793 of America's first restaurant, Boston's Restorator; and Louis Diat and Oscar of the Waldorf, the men most responsible for keeping the ideal of fine dining alive between the World Wars. Though many of the gastronomic pioneers gathered here are less well known, their diverse influence on American dining should not be overlooked plus, their stories are truly entertaining. We meet an African American oyster dealer who became the Congressional caterer, and, thus, a powerful broker of political patronage; a French chef who was a culinary savant of vegetables and drove the rise of California cuisine in the 1870s; and a rotund Philadelphia confectioner who prevailed in a culinary contest with a rival in New York by staging what many believed to be the greatest American meal of the nineteenth century. He later grew wealthy selling ice cream to the masses.
