Research on European food culture has expanded substantially in recent years, telling us more about food preparation, ingredients, feasting and fasting rituals, and the social and cultural connotations of food. At the First Table demonstrates the ways in which early modern Spaniards used food as a mechanism for the performance of social identity. People perceived themselves and others as belonging to clearly defined categories of gender, status, age, occupation, and religion, and each of these categories carried certain assumptions about proper behavior and appropriate relationships with others. Food choices and dining customs were effective and visible ways of displaying these behaviors in the choreography of everyday life. In contexts from funerals to festivals to their treatment of the poor, Spaniards used food to display their wealth, social connections, religious affiliation, regional heritage, and membership in various groups and institutions and to reinforce perceptions of difference. Research on European food culture has been based largely on studies of England, France, and Italy, but more locally on Spain. Jodi Campbell combines these studies with original research in household accounts, university and monastic records, and municipal regulations to provide a broad overview of Spanish food customs and to demonstrate their connections to identity and social change in the sixteenth and seventeenth centuries.

The Visible Hands That Feed provides crucial insights into the rifts and regularities that are characteristic of today’s food systems. These insights attend to the widespread disquiet about the ethics and politics of food production and trade. While challenging utopian thinking, these findings give hope by elaborating on the promising nature of what falls between political and moral agendas. In The Visible Hands That Feed Ruzana Liburkina approaches the food sector against the backdrop of its pivotal role for social and ecological relations to trace the potentials and limitations for sustainable change from within. Drawing on the results of ethnographic fieldwork in Europe and South America, Liburkina conducts an in-depth exploration of the practices, visions, concerns, and relationships that unfold at the very locations where food is grown, processed, stored, and served. By scrutinizing two critical notions in relation to sustainability—responsibility and growth—Liburkina offers insights into how sustainable change might be understood and further supported. In this first study of food production and provisioning that is grounded in participant observation in four types of food sector enterprises—farms, food processing companies, foodservice distributors, and public caterers—Liburkina fills an important gap in the literature on sustainable futures by offering detailed and diverse empirical insights into corporate food production and provisioning.

Then there are connoisseurs, whose approaches to food address “good taste” and frequently require a language that encompasses cultural and social dimensions as well. From the highs (and lows) of connoisseurship to the frustrations and rewards of a mother encouraging her child to eat, the essays in this volume explore the complex and infinitely varied ways in which food matters to all of us. Educated Tastes is a collection of new essays that examine how taste is learned, developed, and represented. It spans such diverse topics as teaching wine tasting, food in Don Quixote , Soviet cookbooks, cruel foods, and the lambic beers of the Belgian Payottenland. A set of key themes connect these topics: the relationships between taste and place; how our knowledge of food shapes taste experiences; how gustatory discrimination functions as a marker of social difference; and the place of ethical, environmental, and political concerns in debates around the importance and meaning of taste. Perennially viewed as both a utopian land of abundant resources and a fallen nation of consummate consumers, North America has provided a fertile setting for the development of distinctive foodways reflecting the diverse visions of life in the United States. Immigrants, from colonial English Puritans and Spanish Catholics to mid-twentieth-century European Jews and contemporary Indian Hindus, have generated innovative foodways in creating “new world” religious and ethnic identities. The Shakers, the Oneida Perfectionists, and the Amana Colony, as well as 1970s counter-cultural groups, developed food practices that distinguished communal members from outsiders, but they also marketed their food to nonmembers through festivals, restaurants, and cookbooks. Other groups—from elite male dining clubs in Revolutionary America and female college students in the late 1800s, to members of food co-ops; vegetarian Jews and Buddhists; and “foodies” who watched TV cooking shows—have used food strategically to promote their ideals of gender, social class, nonviolence, environmentalism, or taste in the hope of transforming national or global society. This theoretically informed, interdisciplinary collection of thirteen essays broadens familiar definitions of utopianism and community to explore the ways Americans have produced, consumed, avoided, and marketed food and food-related products and meanings to further their visionary ideals.

In Libreville, the capital of the African nation of Gabon, the colonial past has evolved into a present indelibly marked by colonial rule and ongoing French influence. This is especially evident in areas as essential to life as food. In this complex, hybrid culinary culture of Libreville, croissants are as readily available as plantains. Yet this same culinary diversity is accompanied by high prices and a scarcity of locally made food that is bewildering to residents and visitors alike. A staggering two-thirds of the country’s food is imported from outside Gabon, making Libreville’s cost of living comparable to that of Tokyo and Paris. In this compelling study of food culture and colonialism, Jeremy Rich explores how colonial rule intimately shaped African life and how African townspeople developed creative ways of coping with colonialism as European expansion threatened African self-sufficiency. From colonization in the 1840s through independence, Libreville struggled with problems of food scarcity resulting from the legacy of Atlantic slavery, the violence of colonial conquest, and the rise of the timber export industry. Marriage disputes, racial tensions, and worker unrest often centered on food, and townspeople employed varied tactics to combat its scarcity. The pursuit of balance pervades everyday life in rural Yucatán, Mexico, from the delicate negotiations between a farmer and the neighbor who wants to buy his beans to the careful addition of sour orange juice to a rich plate of eggs fried in lard. Based on intensive fieldwork in one indigenous Yucatecan community, Predictable Pleasures explores the desire for balance in this region and the many ways it manifests in human interactions with food. As shifting social conditions, especially a decline in agriculture and a deepening reliance on regional tourism, transform the manners in which people work and eat, residents of this community grapple with new ways of surviving and finding pleasure. Lauren A. Wynne examines the convergence of food and balance through deep analysis of what locals describe as acts of care. Drawing together rich ethnographic data on how people produce, exchange, consume, and talk about food, this book posits food as an accessible, pleasurable, and deeply important means by which people in rural Yucatán make clear what matters to them, finding balance in a world that seems increasingly imbalanced. As beef and cattle production progressed in nineteenth-century America, the cow emerged as the nation’s representative food animal and earned a culturally prominent role in the literature of the day. In Cattle Country Kathryn Cornell Dolan examines the role cattle played in narratives throughout the century to show how the struggles within U.S. food culture mapped onto society’s broader struggles with colonization, environmentalism, U.S. identity, ethnicity, and industrialization. Dolan examines diverse texts from Native American, African American, Mexican American, and white authors that showcase the zeitgeist of anxiety surrounding U.S. identity as cattle gradually became an industrialized food source, altering the country’s culture while exacting a high cost to humans, animals, and the land. From Henry David Thoreau’s descriptions of indigenous cuisines as a challenge to the rising monoculture, to Washington Irving’s travel narratives that foreshadow cattle replacing American bison in the West, to María Amparo Ruiz de Burton’s use of cattle to connect race and imperialism in her work, authors’ preoccupations with cattle underscored their concern for resource depletion, habitat destruction, and the wasteful overproduction of a single breed of livestock. Cattle Country offers a window into the ways authors worked to negotiate the consequences of the development of this food culture and, by excavating the history of U.S. settler colonialism through the figure of cattle, sheds new ecocritical light on nineteenth-century literature.
