Hayman's Old Tom Gin In 1863 when James Burrough, opened a small distillery in Chelsea, London. He experimented with a number of gin recipes, giving them names such as Burrough’s, Olde Chelsey, Beefeater and Black Cat. It was James who pioneered the London Dry gin which is known and loved today (at that time, London's gin of choice was Old Tom). It was this which led to the development of the Beefeater Gin brand.... but it also spurred the Hayman's gin brand. The current Master Distiller of Hayman's (Christopher Hayman) is the great grandson of James Burrough. Whilst not common in modern times, with their Old Tom gin Hayman's pay homage to the prevalent gin which was enjoyed when their family started creating gin. The generous quantities of botanicals which Hayman's use in their family recipe ensure a bold citrus and juniper pine character. Smooth and delicate it has a subtle but defining sweetness (as is common in Old Tom gins). More from Hayman's Perfect Serve Old Tom gin's, and Hayman's in particular work very well in cocktails such as the Martinez, Tom Collins and Ramos Gin Fizz. However, it also works particularly well in a more classic Gin & Tonic. We recommend enjoying this with a Lemon mixer, as this cuts through the sweetness and compliments the citrus notes in the gin. Take a large glass filled with ice and add 50ml of the gin. Gently pour over 150ml of tonic and stor gently. Garnish with a slice of lemon.
