Metaxa 7 Stars Metaxa has been sold since 1888, when its founder Spyros Metaxa created his spirit due to a desire for a smoother, intense spirit (he felt others available at the time were harsh on the palate). With over 130 years of history, Metaxa has been exporting its family of spirits across the world since its foundation in Piraeus (the port of Athens). Interesting fact: It's said that the “Salamina Warrior” which is shown on the bottles, was used due to a medallion being found during the building of the distillery. The Battle of Salamina took place in 480 BC in the waters near Piraeus.  The star denomination found with Metaxa relates not to the age, but rather the number of base wines and spirits that go into each blend. Whilst this is a brandy like drink, it's not classed as a brandy - rather sitting in it's own category. For their 7 Star, Metaxa have created a drink which is balanced and fruity. The liquid itself is of a deep amber hue, with a hint of copper. On the nose it has floral notes which are joined by ripe peaches and prunes. The flavour is complex, with both cinnamon and coffee greeting the palate. It develops into a well rounded drink with a full body filled with sweet, mature fruits and toffee. It has a long finish, and leaves notes of fruit in the mouth as well as a hint of rose in the background. More from Metaxa Perfect Serve This is a spirit which can be enjoyed neat (at room temperature), or served over ice. However it also works exceptionally well in longer, refreshing drinks. For a special drink, try a Manhattan Bay Cocktail. In a chilled mixing glass add 50ml of the Metaxa 7 Stars, 25ml of sweet red vermouth and add 3 dashes each of Angostura Bitters and Angostura Orange Bitters. Stir well and serve in a cocktail glass. Garnish with a twist of orange zest and a cocktail cherry.

It is made from wine distillates which have spent time in both medium and heavily toasted oak casks. The time in these casks ensures a more pronounced oaky smoked flavour, and a radiant amber colour On the nose, orange peels, coffee, chocolate and the toasted oak greet you. The flavour is complex, with dried fruits, orange zest and hints of allspice developing on the palate. However it also works exceptionally well in longer, refreshing drinks. How about trying a Metaxa Sour? In a rocks glass add a few cubes of ice. Take a shaker filled with ice and add 50ml of the Metaxa, 20ml of lemon juice, 10ml of sugar syrup and add 2 dashes of bitters. For a foam head add 20ml of egg white, or a few dashes of Fee Brothers Foamer. Shake well and strain into the glass. Garnish with citrus zest.

It is created with a blend of muscat wines from the island of Samos (in the eastern mediterranean), aged wine distillates and mediterranean botanicals (including rose petals).  The wine distillates are created with Greek Savatiano, Sultaniana, and Black Corinth grapes. These are allowed to dry in the sun and fermented to produce a sort of wine. This is then twice distilled, and aged in Limousin oak barrels, ensuring a unique and delicious flavour. This attention to detail ensures a spirit with a delicious aroma, which is a mix of brandy and floral perfume notes (especially of rose petals). Honey, apricots, and a toastiness from the oak barrels also come through. The flavour has a delicious light honey sweetness to it. Hints of orange marmelade, and floral notes from violet also make themselves known. These all blend perfectly with ripe plums, a freshness from grapefruit and a delicate pepper like spiciness.
