Teeling Whiskey Stout Cask With a family history in distilling which dates back to Walter Teeling in 1782, it was no surprise when Jack and Stephen Teeling opened a distillery in Dublin in 2015. In fact, the Teeling Distillery is now the first new distillery in Dublin for over 125 years. They wanted to create a contemporary brand, which, whilst looking to the future they ensure to keep an eye on the past. In this way, they can appeal to the modern whiskey drinker, whilst ensuring traditions are honoured. For their Stout Cask whiskey (one of their limited edition releases), their unconventional approach has created a whiskey which comes full circle. For many years they have been collaborating with Galway Bay Brewery (a celebrated craft brewey). They send them their used barrels, which had held Teeling's Small Batch Whiskey, and the brewery use them to create stout. That used be where the story finished. However, now they return the barrels (which has been further seasoned with the Imperial Stout), and Teeling finish a whiskey in them. These barrels impart a rich, dark and malty influence to the whiskey. This influence, Teeling believe, is a "true celebration of flavour-focused innovation". On the nose this is a whiskey with notes of dark chocolate and truffles. Hints of sour apples and ocean spray enliven the aroma. On the palate there is sweet malt, roasted barley, sour fruits and interestingly, black cherries. The finish develops into a sweetness of honeycomb, oranges and cream.
