Abasolo El Whisky De Mexico (The Whisky from Mexico) is distilled using 100% Mexican Cacahuazintle (kaka-wha-SINT-lay) corn. This corn has been cultivated and passed down for more than 200 generations of local farmers. It has a distinct, extraordinary flavour, which it imparts to the whisky. Through the use of nixtamalisation (a 4,000 year old cooking technique), Abasolo unlock the deep flavours found within the corn. This process has never been used in whisky production, but is common-place in preparing corn as a food in Mexico. Copper in the Clouds Mango & Black Pepper Gin Created in 'The Distillery at Dowsett's Farm', Copper in the Clouds gin is a small company creating premium gin's in Hertfordshire. Historically, Hertfordshire (a county just to the north of London) was the hunting ground of the British Royal family, and is still relatively rural with numerous forests. They create their gins using locally sourced premium wheat spirit. Where possible, they use locally grown and sourced botanicals, and have even started growing some of their own botanicals on the farm in their recently created botanical garden. This attention to detail ensures a quality, and unique range of gins which they can rightfully be proud of! Each of their bottles is a piece of art itself. With this gin, they capture a tiger and parrot enjoying a meal of mango and cracked black pepper. It was a 2014 study which inspired this gin. A group of food scientists was commisioned to find the best garnish for a G&T. As you might guess, the rather surprising result was a slice of mango and cracked black pepper. Copper in the Clouds felt this sounded particular good, but why stop at just a garnish! They have therefore infused fresh ripe mango, and the best peppercorns into their gin. The gin itself is deliciously fruity, with clear fresh mango flavour. The black pepper is subtle, and doesnt overpower the gin at all, rather tantalises the taste buds!
