They are distilled and then combined with the Chardonnay wine alcohol from the wine de-alcoholisation process, This combination makes for a delicious and lucious, fruit flavoured vodka.  On the nose is an initial burst of fresh green apple, followed by a deeper note of almond croissant and a brighter note of lychee. It has a smooth and lucious mouthfeel with fruit forward notes of Williams pear, guava and starfruit on the palete. To make a spritz, add ice to a wine glass and pour in 50ml Discarded Grape Skin Chardonnay Vodka. Add 50ml sparkling wine (if you have a bottle open in the frige already, then this is perfect, even if it's slightly flat). Add 25ml citrus cordial and top with lemonade and add a slice of lemon. Foe a classic and elegant vodka martini, stir 50ml Discarded Grape Skin Chardonnay Vodka and 20ml dry vermouth into a mixing glass filled with ice. Hayman's Gently Rested Gin In 1863 when James Burrough, opened a small distillery in Chelsea, London. He experimented with a number of gin recipes, giving them names such as Burrough’s, Olde Chelsey, Beefeater and Black Cat. It was James who poineered the London Dry gin which is known and loved today (at that time, London's gin of choice was Old Tom). It was this which led to the development of the Beefeater Gin brand.... but it also spurred the Hayman's gin brand. The current Master Distiller of Hayman's (Christopher Hayman) is the great grandson of James Burrough. For their Gently Rested Gin Hayman's looks again to history. Gin always used to be rested in casks during the Gin Palace heyday of the 1800's, and so again Hayman's repeats history and uses old Scotch Whisky barrels to rest their gin in for a period of three weeks. The result of this short (gentle) resting period lifts the botanical flavours in the gin, enhancing the peppery spice notes.  The result is a really smooth, well-rounded balanced gin. It has peppery and spicy notes from the dominant botanicals – juniper and coriander – which add to its full-flavoured individuality. Copper in the Clouds Marmalade Gin Created in 'The Distillery at Dowsett's Farm', Copper in the Clouds gin is a small company creating premium gin's in Hertfordshire. Historically, Hertfordshire (a county just to the north of London) was the hunting ground of the British Royal family, and is still relatively rural with numerous forests. They create their gins using locally sourced premium wheat spirit. Where possible, they use locally grown and sourced botanicals, and have even started growing some of their own botanicals on the farm in their recently created botanical garden. This attention to detail ensures a quality, and unique range of gins which they can rightfully be proud of! Each of their bottles is a piece of art itself. With this gin, they capture a marmalade cat (ginger) lying on a slice of bread peeling oranges - along with a rabbit and a jar of marmalade. This isn't just called a Marmalade gin due to the citrus uses in its creation, they actually use real marmalade! This is created using by the team at the distillery themselves. They use pink grapefruits, seville oranges and the peel from blood oranges in it's creation. This gives the gin a rich flavour, with an orange colour to it. This is entirely natural, and comes from the marmalade itself. As well as the marmalade, the other botanicals include juniper berries, coriander seed, licorice and angelica root, as well as more citrus flavours from orange and lemon peel. As you would expect, the flavour and aroma is sweet and zesty, exactly as you would expect from marmalade! More from Copper in the Clouds Perfect Serve As this is already a sweeter gin, we recommend enjoying with a lighter tonic. Fentimans Naturally Light Tonic works really well. However, if you want to increase the citrus flavours, try using their Valencian Orange Tonic. Take a large glass filled with ice and add 50ml of the gin. Gently pour over 150 - 200ml of your chosen tonic and stir gently. Garnish with a fresh orange wheel. It also works well in a spritz, when mixed with soda water, or even Prosecco. Truly versatile, it also adds an enticing edge to cocktails.

Lind & Lime Gin With it's distinctive, and eye-catching bottle this Scottish gin certainly stands out from the crowd! And so it should....  Produced in Scotland, the distillers take inspiration from the heritage and industry of Edinburgh, as well as its maritime history. It's also produced in the historic distilling district of Leith.  They wanted to create a defined London Dry gin, they wanted it classic, and simple. Creating just the one product - they strove to create perfection in doing so. Using a base of neutral grain alcohol, this is a gin which is proud of it's classification. As such it has a clear and defined juniper core to it, which is the first of seven botanicals used in its creation. As the name would suggest, Lime is the next important ingredient. This gives a powerful zesty and refreshing flavour to the gin as it's the skin of the lime which is utilised. Pink peppercorns are also used which perfectly balances the lime, adding a gentle and not over-powering edge of spice. These are all blended with the remaining four botanicals to create Lind & Lime's Gin. The result is a gin which is full of fresh, authentic citrus flavour. The Juniper lends a delicious silken oiliness to it which coats the mouth perfectly, ensuring a smooth gin. A subtle spice comes from the piney juniper too, and is joined by the light pink peppercorns and a degree of warmth from cardamom. All in all this is a really refreshing gin which is smooth and very well balanced. Interesting fact: This Gin's itself comes from James Lind who was born in Edinburgh in 1716. He joined the Royal Navy in 1738 as a surgeons' mate. Whilst onboard the HSM Salisbury he conducted one of the first clinical trials ever recorded - using limes - which became part of the story in the prevention of scurvy. Hence the 'Lind' and 'Lime'. Perfect Serve The distillers believe this works well with Fever-Tree's Refreshingly Light Tonic, and we have to agree. However if you're not a fan of the light tonics, any premium neutral tonic will work well. They also recommend a 2:1 ratio of tonic to gin. This can be on the strong side though, so we'd suggest starting with 50ml of gin and 150ml of tonic. Mix in a large glass filled with ice, and garnish with a wedge of lime (of course!).

It's a certified B Corp™ and is owned and operated by a small husband and wife team of Adam & Steffie Elan-Elmegirab. They use a combination of traditional and modern production techniques, as well as British grain spirit as the alcoholic base of their drinks. They then source botanicals from across the globe, and produce entirely with natural ingredients - refraining from using artificial flavours, preservatives or colours. Fun Fact: The coat of Arms on the bottles is a homage to both the Aberdeen and London City Coats of Arms. The Black panther adds a reference to the hip-hop music listened to by the team on most days - as well as the original Old Tom branding which would commonly feature a Black Cat. As part of their exploration of global flavours, in July 2018 The House of Botanicals launched their Maple Old Tom. This was initially due to be only a limited edition, with just 1112 bottles produced - and was introduced at the Aberdeen Gin Fest. Due to its popularity, it was relaunched in March 2019 - becoming a permanent addition to their range. Whilst new to the House of Botanicals range, the production of Maple Gin goes back over 100 years. It was originally created by the Buffalo Distilling Company of New York between 1893 and 1918 (prior to the temperance movement and then prohibition. For their edition, the House of Botanicals use the same base as their Classic Old Tom. However they then lightly sweeten it with maple syrup (less than 25g per litre, so as not to 'over-sweeten'). The result is a delicious straw coloured gin. The nose has juniper and bright citrus notes - joined by piney juniper. On the palate there is a buttery mouthfeel, with bright and fresh piney juniper. This is perfectly balanced with hints of sweet maple, fudge, warm orange citrus, vanilla, and chamomile. The finish is long, clean and invigorating with a hint of butterscotch More from The House of Botanicals Perfect Serve This is a deliciously versatile Old Tom, which works well with a simple mixer (such as tonic water, ginger ale and even grapefruit soda), but also in cocktails. Whilst perhaps best known for their delicious Old Tom gins, they have now released their first non Old Tom, with their ABZ (the Aberdeen Airport Code) Dry Gin. This is made using a two stage process. Initially they use a traditional copper pot distillation of juniper berries, angelica root, orris root, coriander seed, cassia bark, almond, orange peel and lemon peel. After this, a second stage maceration is used with saffron threads, fennel seeds and just a hint of strawberry. The second preocess used preserves the more delicate flavours in these botanicals, which would be lost using traditional distillation. The result is a gin which has a light peach colour to it, with an aroma of piney juniper,  butterscotch, lemon and an underlying note of cracked black pepper. On the palate this has a rich, creamy mouthfeel - with the juniper and pine giving a strong back note to the gin. Bright citrus, warm sweet anise, and creamy strawberry lead into a finish of cracked black pepper which enlivens the taste buds. More from The House of Botanicals Perfect Serve This works perfectly as a long drink, mixed with either a dry tonic (such as Three Cents Dry Tonic), or Fever-Tree's Sicillian Lemonade. With either option take a large glass filled with ice and add 50ml of the gin. Gently pour over 150 - 200ml of your chosen tonic and stir gently. Garnish with a thin slice of strawberry. It also works exceptionally well in the mix, in cocktails such as the Dry Martini, Gimlet, Southside or Gin Fizz.

House of Botanicals Old Tom Raspberry Gin was officially launched in June 2019 as a seasonal exclusive, using locally grown Scottish raspberries, available from June to September. This is a true Old Tom Gin, using their original Old Tom as a base - with a subtle hint of natural raspberries alongside the other botanicals. Due to the use of natural raspberries, there is a delicate pink hue to the gin. The nose brings aromas of candied citrus as well as piney juniper. As can be expected, raspberries also come through - along with a hint of black pepper. On the palate the juniper and pine continues to dominate joined with citrus and spice, all enveloped in a creamy mouthfeel. Roer goed en zeef in een gekoeld cocktailglas en garneer met een partje verse citroen.
