Mount Gay Black Barrel Rum At the top of Mount Gilboa, in the St Lucy's parish in Barbados, stood a small distillery, which was inherited by John Sober in 1703. A fourth generation Barbadian, Sir John Gay Alleyne was hired by the family to bring the distillery into the new era, and to honor the success of his innovation and achievements the distillery was renamed Mount Gay - a name that has a pedigree for excellence and craftmanship.  By taking the natural elements from Barbados, Mount Gay Rum is made by combining the local water, cane, and airbourne yeast. Not only a tradition, the process of refining the cane into sugar and then fermenting into molasses, produces the most essential ingredient for their rum. Mount Gay Black Barrel Rum is rich, complex and well rounded. Made using a traditional column and double retort pot still, the rum is then matured in ex-American whiskey casks, and finished in heavily charred ex-bourbon casks for 6 months (hence the name, Black Barrel).  This delicious rum has an aroma of woody and butter notes, which are balanced with dried fruit and spices. The taste is bold and aromatic, with notes of spicy gingerbread, sweet lychee and creamy toffee, and is well rounded and warm, with a medium body and long finish. Copalli Barrel Rested Rum Copalli Rum is made in the rainforest in southern Belize. With three core businesses - the Copal Tree Farm, where they grow and harvest the sugar cane, the Copal Tree Distillery that makes the Copalli craft rum, and their eco-tourist Copal Tree Lodge, their mission is both social and environmental.  By providing rewarding jobs for the local people to support their families, they will not rely on the logging industry, that is destroying the rainforest and the ecosystem. This will help to preserve the much needed rainforest, and with the lodge, they can positively promote the region. Good to know that to set up these facilities, no part of the rainforest was cut or destroyed.  Copalli Craft Rum is made using only three ingredients - freshly pressed juice from the organically and sustainably grown sugar cane, rainwater from the semi-tropical climate, and yeast (which is needed to start the fermentation process). To craft Copalli Barrel Rested Rum, sugar cane juice is distilled in their column and pot stills and then rested in used American Oak bourbon barrels which mature in the rainforest climate. Brenne French Single Malt Whisky What sets Brenne apart from the crowd was its desire to show terroir (a sense of place found in the smell and taste) is possible when making single malt whisky. Brenne was founded by a former ballerina turned whisky entrepreneur (Allison Parc), and is crafted at a third-generation farm distillery located in Cognac, France. The process begins in the fields, where two types of heirloom barley are grown on the estate. These are the starting point for Brenne Whisky. The mash is created using a strain of yeast that has been used by the distillers family for generations. This is then twice-distilled in an alembic Charente still. The resulting liquid is then rested in their signature barrels for a minimum of six years. They use two types; new French Limousin oak and Cognac casks. After resting, the proofing is done using water from the Charente river before bottling. It is this attention to detail that gives the enjoyer a true sense of French terroir in the taste and smell of the whisky.  The whisky has delightfully perfumed fruit and French patisserie aromas, which are joined with creamy and complex sugar notes. Highly reminiscent of rich creme brûlée and burnt caramel. The flavour is a joy on the palate with notes of banana, tropical fruits, and spice (think of warming cinnamon and cloves). LALA Tequila Blanco LALA Tequila has its home in Amsterdam, but it was time spent in a Brooklyn bar that led 2 Dutch friends (Ambre and Iris) to bring the New York tequila culture to the Netherlands. After they returned, they had their memories, but the top-quality tequilas that were part of those memories, were not available. The obvious solution was of course to create Amsterdam’s first tequila brand. LALA Tequila is made with 100% agave in the heart of the tequila region, in Jalisco, Mexico. Each small batch is hand-crafted in an award-winning distillery, ensuring a quality drink every time. This smooth tequila has a bold and classy style and is ready to be enjoyed. LALA Tequila starts with the agave. It is cooked for over 9 hours to soften to piña, making the sugar extraction process easier when milling. Coming from the Aztec Nahuatl language, the name Zacapa means “on the river of grass. Proudly made in Guatemala, Zacapa Edición Negra Rum is a blend of rums aged between 6-23 years. They age the rum using casks that previously held robust American whiskies and fine wines, giving this delicious rum a complex and balanced sip. The Process Zacapa Rum is made using the first press of virgin sugar cane, instead of molasses (which is more common). By using sugar cane, it makes the rum sweeter and smoother. The yeast used during the fermentation process is derived from pineapples, which brings out incredible aromas and flavours, and through the distillation process the aroma and flavour charater and profiles are defind for each of the Zacapa Rums. Pusser's Rum Gunpowder Proof Spiced Pusser’s Rum is the original Royal navy Rum, distilled in wooden stills located in Guyana. It is the only rum blended to the Admiralty's exact specifications, a specification that was last used on July 31, 1970, ending a 300 year old tradition. The blend is rich and full-bodied and aged for a minimum of 3 years in charred oak bourbon barrels. It is also exceptionally smooth due to its wooden 'pot stilled' heritage. These stills provide a deep flavour, having absorbed unique and organic flavours over many decades of use, something that a mass produced rum would struggle to replicate. The rich flavour is all natural, with no added artifical colourings or flavouring and made using molasses, made from sugar cane grown in the "Valley of Navy Rum". This is the nickname for the Demerara River Valley, a region that once had 300 sugar cane estates, all of which had their own distillery, and an area celebrated for its production and distribution of sugar since the 1600's.  For their Gunpowder Proof Spiced Rum, they enhace the flavours with a higher abv of 54.5% and also add a delicious combination of spices. It has the same dark coppery amber colour and intense aroma of the Gunpowder Proof rum. You are greated by the strong smelling molasses, which are joined by banana, chocolate and sweet vanilla. Again there is a whiff of oak from the barrel and the spiced aromas of cinnamon and mild ginger. On the palate, the flavours are enhanced by the higher abv compared to the lower proof Pussers Blue Label. It is full bodied, and yet despite its strength, has a smooth and mellow finish. Did you know? To test the strength of the sailors daily tots of rum on the Navy ships, a little gunpowder was added. If it ignited, then it was 'at proof'. Tënu Gin - Le Bon Tikka Barrel Aged Gin Founded in 2014, Tenu Spirits was created by Chef Antto Melasniemi and Artist Klaus Haapaniemi. They had a shared desire to explore, be excited and ensure quality drinks - and so they decided to create their own drinks brand. The original Tënu Gin was created for a pop-up restaurant in London. After proving hugely succesful, they decided to launch it into the wider market. Like a lot of great things, the birth of Le Bon Tikka gin started by accident. During the creation of a test batches of Tënu Gin, Bilberries were substituted for the usual lingonberries. Initially this was too heavy and not found to be acceptable on the palate. However, it did bear some promise - so it was decided to allow it to age in new oak barrels for a period of 6 months. They tried a number of different barrels, and the results varied. Some too vanilla, some far too woody. However, upon blended they found a perfect mix - and Le Bon Tikka was born! Only 1800 bottles of this have been created - so a definite limited edition! Fun fact: Tikka means woodpecker in Finnish - hence the name! It can also be found on the label along with the bilberries. Whilst they keep the full list of botanicals a secret, it is know to include juniper berries, bilberries (only wild, handpicked Finnish ones), wild rose petals (sourced from the Finnish archipelago), orris root, coriander seeds and lemon peel. With a stronger abv this is a gin which is truly packed full of flavour. There is a lot of woody juniper in this, which is joined by oaky spice and hints of sweet stem ginger. A sweet caramel also comes through which evolves in the mouth to floral lavender, warm vanilla and interestingly a clean citrus finish.
